All of the characterization of GIl in FSN and Zero shows him to be this arrogant. He is basically a god, so why should he bother using his precious Ea on what he views as a fly on the wall.
Narratively Gil loses the fight in UBW, because the entire route is building up to showing off Unlimited Blade Works.
Similarly, Illya doesn't die till the very end of Heaven's Feel, because the Third is what we've all been waiting for.

Even with UBW there is no way that Shirou can beat Gil or any servant. The point of that fight is that Gil was mad, went retarded and that was his downfall.

I'm not Jack and you stated no way for Gil to counter Avalon. Which is because he has none. The only possible argument is that Avalon only has a single usage which is a pretty large jump in logic.

Yeah in itself it won't help her beat it but with Gil uses Ea and everything about his character implies he would serious or not then he'd lose.
He has a chance if he never uses Ea but that's a low priority victory condition in most encounters he would lose.
It's way more than that. She has to get into position, bait him into leaving himself open, keep Avalon absolutely hidden until the last moment, and then hope for the best. It's a big shot in the dark that only works under the condition that he doesn't kill her any of the tens of times he could snuff her out.
You haven't explained remotely why. All Saber needs is for Gil to use Ea. Gil spams that shit in their fight to assert dominance. There was no trap or bait, the fight just went on longer for dramatic effect.
Avalon is only a defensive tool.
It allow Saber to counter EA, and counter attack quickly.
But Gil doesn't need to use EA to beat Saber.
If he sticked to swords spam, he would have won. Only Archer can counter it.

Only reason Avalon gives Saber a chance is because she's temporarily in another dimension while Ea rips apart space/time. And Gil never used a full powered Ea against Saber's Avalon.
Avalon can not beat Ea.
Avalon can't match a full powered Ea, if both hit, it will "rip" the truth from Avalon. Saber can only win against a cocky or jobbing Gil.
Gil would never do that however. serious or not he just wouldn't. his whole pride is built on the fact he's the strongest hero in existence. To not use Ea is to admit he's inferior to Saber.
Because Shirou has a speed advantage within Unlimited Blade Works.

Gilgamesh only has the opening to use Ea BEFORE Unlimited Blade Works is set up. Once it's set up, the advantage goes to Shirou and Gil more or less loses his chance at victory.
He needs to be unable to react. If she gauged that simply using Ea was enough, she would have done it the first time and been done with it. She instead waited until he went full spin on it to keep him from being able to stop it or retreat in time by setting her self up inside the spot created by the beams clashing

Avalon is basically the ultimate defense. As long as Saber is protected by it, she cannot be touched. It completely negates all physical phenomena and even protects the user from interference from True Magic. This also includes Ea. As long as Saber is using Avalon, she is completely isolated and cut off from everything.

The "truth" is mainly just a visual effect. When its used at full power, it reveals the form of the planet back in its primordial days, at the days of its birth. But that effect in itself doesn't actually harm anyone.
Enuma Elish is a physical phenomenon. Avalon completely shuts down all physical phenomena. The King of Heroes cannot harm Saber as long as she's within the confines of Avalon, not even with Ea.
Nah. If she could have done it, she would have. She didn't for a reason. Your judgment doesn't supersede Saber's, because we know for fact that she wouldn't/couldn't afford to use it then.

That's not how it works at all.
The thing with Avalon is that it's pure defense. She needed to keep it as a trump card until the very last moment. If she used it earlier on and failed in her counterattack, Gilgamesh would have become more wary. Saber would lose her chances to counter of Gil knew what was coming. That's why she had to save it until she had a clear shot.

Not exactly. It's special ability can be said to be similar to EA in how it 'reveals the truth'. That, and it has the ability to 'kill' TYPEs which normal weapons cannot.
No she could have used it then. That was heavily implied. It doesn't take much intelligience to realise she didn't because she believed Excalibur was enough. It was a whim there was nothing physically stopping her. Much like how there was nothing physically stopping gil from bringing out Ea the second he entered UBW outside of his ego.
