Plus, the winged ram of the Golden Fleece is the one that became the Aries constellation, and the fleece itself a tribute to Ares, so you could easily get creative there when making an NP.

The guy must have been stupid or ignorant. There are a bunch of magically gifted women in Greek mythology, and Medea's magical feats really are not very impressive in that context. Summoning her primarily for her prowess as a sorceress is just a bad idea.

Why would you ever want to use a catalyst? If Kiritsugu got someone who was like him in mind he would have crushed everyone in the previous war.
About the only case I can see for a purposeful summoning of a specific servant is Cu and Bazett, and we all know how that turned out.

Because good match does not equal good servant. He could try to wing it and get a shitty one or he could accept the gift and summon King Arthur with Excalibur, almost guaranteed saber class servant which everyone thinks is the best. He didn't know that King Arthur was a stubborn little girl.
If you wing it and don't use a catalyst, you could get fucking anyone who is like you. That could mean anything really, which could result in a high chance of someone who is shit.
When other people in the war are able to get catalysts for specific heroes they want, then do you really want to rely on blind luck just on the promise of them having a compatible personality?
Sometimes people want control over their servants. A known factor in servant summoning is preferred to a random summon for most magi because they can know their strengths/weakness.
Would he get the teeth that summon soldiers, and the pebble that sends everyone into a berserker rage? And what properties does the Argo and the Golden Fleece have? And does he get the Argonauts as summons, or are they disqualified on account of the number if them who are Heroic Spirits themselves?
Unless he knew about the corruption of the grail, the grail was believed to be unable to summon evil or bad spirits. The whole Angra Mainyu thing kinda fucked that though, which is why Medea became eligible. Not sure if the fact it could summon "evil" or not good spirits was common knowledge or not.

It seems obvious to a truly knowledgable master (of which there obviously weren't many as the nature of the grail was fairly nebulous) that a servant capable of working with you would be better than a demigod who would backstab you. A rebellious servant is going to be trouble and eat command seals, and you have to keep at least one to get the servant to kill itself at the end. That said, Magi are pretty fucking dumb in universe and do some stupid shit. I don't like that excuse, but canonically you make a lot of sense, nasuverse magi do dumb shit like that just to stand out, and take the hardest route to the simplest ends.

extreme example, but still. Even a weak servant has their pluses if you play to their strengths, and Emiya's projection skills, even as a nameless servant who therefore had little power of his own, made him capable of going toe to toe with pretty much everyone.

In all honesty i would wing it and rather work with someone i can agree with but it is tempting to summon heroes like Houyi who shot down suns with a normal bow or the user of Tyrfing who as killed so many man that the bodies of the numerous warriors choke the rivers, causing a flood which filled the valleys with dead men and horses.
