Look at Log Horizon for example, it's a simple yet recent example of why harem elements just take away from the overall piece. Akatsuki already has a role of a guardian, loli is a mini Shiroe for scrubs horizon and the secretary organizes affairs. One could argue that maybe that one fox bitch could get away with it because that's her main reason to contact Shiroe and it actually is important that she gets no affection from everyone.
But you let all these stack up and it stops being interesting. It doesn't even have to be the main focus of the show for them to happen and they're not always listed as the main genre. An easy example of this is Golden Boy, where the main thing is sex comedy and some slice of life but MC gains an odd harem following over time during his adventures and quest on self improving as a side effect. There's dozens of shonens out there where the main focus is fighting or adventure and there's women lusting after MC's dick.

I would also add that writing of females in anime can be hit and miss. Generally when it's a female MC, she's written perfectly fine, but if it's a female secondary character, they are generally written as a bland shitty trope. Though I think anime in general has better representation of female characters than western shows.

There's no reason to not have a story that starts with a relationship that eventually falls apart and breaks the protagonist. He or she would mope about, or bury themselves in work, or do something to numb the pain. But then they build themselves up and become happy and more mature after all of it.
Right now most of this kind of stuff just stays too safe and doesn't try to venture out and try different things.

The flaw in your logic is that not everyone has the same reality. The life that you live is not the same as the life that others live, and so a life that is not your own can be both real and an escapist fantasy.

a Fit but not overly built, 6'1 Operator roughly 25 years old, who is well aware of his attractive female counterparts and flirts/fucks them in his spare time, is at his best when he is NOT dieing, Is highly perceptive, intelligent but average looking, Uses only practical weapons such as firearms(only bladed weapon he carriers is a buck knife, which is more of a tool than anything else, but acts as a red herring) and is well aware of his limitations and will not attempt to surpass them unless victory is within grasp
His love interest is not his first choice, and only a few people he comes across actually crush on him in the series. (she is well aware that she is not his first choice, and tries to be useful/prove herself without putting herself in undue risk)
His arch-enemy is an elusive target that is slightly more skilled than him, but is more level-headed and knows his opponent well, manages to just stay a few steps ahead of him/does not present himself in impractical moments/most of their crossings are chance, and they manage to wound each other/ kill each others comrades during the course of the series/have close scrapes with death.
MC's Love interest is hurt during one of the closing firefights, he takes a mad dash to save her, and gets injured himself in the process, but is able to conduct immediate first aid (it is ambiguous if she survives or not, as he does not mention her in attempt to keep a level head and not go full fucking emo god lord like all the other series)
And the series ends with the MC barely managing to defeat his enemy by sheer luck ( a lucky shot hitting the plate carrier in the same spot twice or something), before more of the enemies henchies (who are competent foes, nearly as skilled as the MC) move in, it is not known if the MC manages to survive the encounter, but the odds are stacked against him.
I think that covers just about every trope.

Also, no it really isn't. What is childish is to think in terms of a single life, and imagining that because a life may be more or less exciting that means reality is more or less exciting. That is not the case, reality itself is boring, usually only by looking at things through a distorted lens or in close up does it ever resemble something something interesting. The level we operate on is very very boring.
