Fate Shirou clearly has the most resolve since he's trying to save everyone and going "No, it's not impossible". Hogwarts is shit, going off to be a hero is worth far more than that, along with going to Avalon.

Difference between getting to Avalon and just having Saber sit at the breakfast table, one of those took a fucking miracle to accomplish that was impossible for any human. Meanwhile the in UBW she's just at the table because a grail just summoned her out of nowhere for no reason and she stuck around because she was contracted with Rin.
Not even close to the same thing; getting into Avalon by force is a big deal, seeing Saber at the breakfast table is shit.

Because I'm not enough of a tool or a fanboy to think everything I like is perfect, I suppose. I nearly put the thing down after reading Fate many years ago, but one thing the route DOES do well is pique one's curiosity about the things left unsaid by the route - Who even is Archer? What happened to Sakura? What's the deal with Caster, who is her Master? et cetera, et cetera. That curiosity ended up paying big dividends, as I enjoyed UBW immensely and HF was my favourite route, despite what >>123061565 may think.
F/SN isn't my favourite visual novel, but as a whole package it's still a fun ride if you're the kind of person who can enjoy Nasu's admittedly sometimes exhausting way of explaining things.

Humans are inconsistent, HF should tell you that humans aren't limited to a single path or action. People might choice this way or that way if the situation gets tense enough. Humans are shaped by their situations entirely.
In fate route he wasn't allowed to pussy around, even if he wants to save everyone he has to make concessions if people are actively dying around him.
The fact that it was added in later ports of the VN in response to Saber's explosive popularity just supports the notion that it was added as wankery because of fan disatisfaction with the lack of Saber/Shirou happy end, and therefore shouldn't have any bearing on discussion of the 'proper' narrative as it was written, because it wasn't an ending that Nasu originally had in mind.

Shirou already demanded Shinji to stop it several times, and was pressured by the knowledge that people are dying, and adrenaline rush from the danger and injury. So he was in a state to make emergency snap decisions. (Besides I think that was the Dead End).

Everything that's official is canon, things that aren't are not. Nasu himself says there are rules for how his multiverse works, some things aren't possible, it's not "Everything is possible". It's just "Everything within the Kaliedescope is possible". Tsukihime apparently cannot take place in the same world-line as Kara no Kyoukai is one example he gave.
As long as Nasu has wrote off on a story like "yeah this is officially part of it now", its in the canon. Simple enough
I remember him even having some official line of stories in one of the data-books, which he apparently took DEEN out of the canon.
