I think it's far worse to throw ten nobodies at the reader right in the beginning of a tournament or something, just because they're part of the Big Ten or whatever and there must be ten. Rival characters should be properly introduced and developed, one at a time, like Isshiki, or Curry and Kurokiba.
From story telling perspective there isn't really any need to introduce all 10 just because some of them were. The most logical point is of course when they graduate since obviously Tootsuki graduation is a massive event and the graduates are gods amongst chefs.
When I saw him in the first time I thought "oh well, another perfect smug rival". But he turned out to be pretty pleasant character. He has right proportions of cuteness and coolness.

Well, consider that while most of the students going to the school dream of owning or inheriting their own top class restaurant, the Nakiri girls are a little more locked in. While Alice has more freedom than Erina, it's still far more likely that she'll end up running a Nakiri culinary research institute like her mom does. Meanwhile Erina is the heir to their entire conglomerate, and will eventually be expected to oversee all their businesses.

No, Souma wasn't really disrespectful at his exam. His first and only offense was not knowing who she was and not being intimidated by her aura. He was genuinely curious and excited to be able to cook and he expressed gratitude at being able to take the exam despite the fact that every other applicant hauled ass and Erina was already ready to go on with the rest of her day. You don't fail someone because they teased you a little.
