I think he DID want a rematch with Buu because he felt bad that he couldn't beat Buu with his own Power. But while Fighting Uub he realized that while the kid has Buu's power he doesn't have discipline or even know techniques like Flying. I think Goku saw Uub's potential and decided then and there that he wanted to train Uub just like how Muten Roshi trained him.
Goku's pretty short sighted so I doubt it was premeditated. It was probably something that just occurred to him during their fight.
GT and the anime don't matter. She only appeared in a few panels of the manga, and she was smaller than Oolong there (unlike in the anime), so she can easily be younger than Pan.
He could still be relevant. Majin Buu was a primordial entity and the second strongest being in the universe for a long time, and presumably never trained.

No, Super's prologue scene where they make a wish for people to forget Buu takes place 6 months after Buu. Super itself takes place "sometime after that". We know that at least one year had to pass before the birthday party in order to restore the Dragonballs.
Still, at this point I just assume that the movie timeline is still in play (so Super would start 4 years after Buu), since they haven't officially discarded the epilogue.

Goku only wanted to train Uub because he wanted a re-match with Buu. When he is done with that Goku is going to look for another opponent. Because that's how Goku is.
Just look at DBO, in there Toriyama never mencioned Uub, the only ones that fought against ex-Frieza army were Gohan, Krillin, Tien, Pan, Goten and Trunks. Uub became irrelevant even in DBO.
I wonder how does super fits with the original epilogue again. I mean, training Uub to git gud doesn't have the same impact when suddenly goku can go god mode and for RoF buffed his powerlevels so hard that at base form he's crazy powerful to the point that it doesn't make sense that the epilogue Uub could hurt him a little.
I'm just saying that was MY impression of Uub, simply based on how often Goku spent the Buu saga talking about how he wants to leave the fight to the younger generation. When we talk about "Toei Treatment" I think more about the lines about what they did to Bardock's character or what they did and what they were planning to do about the Sayians past (they were evil because of a virus). Or hell, the entirety of what they did to all the characters in GT.

I really wonder why they Toriyama decided to write this current storyline before the epilogue. It would have been a lot better to write it after those events, in order to avoid inconsistencies.
Because outside of DB manga and the Neko Majin one-shoy, Uub is never mencioned. DBO, the example I use is a story written by Toriyama himself, that supposedly happens in the future. In it Uub's story is never addressed. Goku and Vegeta died fighting each other in space.

Oh yeah, I definitely agree. I would MUCH rather see a story about the kids. Especially if the kids started out weak enough that they could reasonably go on dragonball-esque adventures and still have an interesting magical world to explore. You could definitely do a lot with that next generation and I'm hoping if Super DOES time skip it switches focus a bit. But at the moment it seems Toriyama wants to keep doing the same thing he's always done, which I don't really mind either.

Boruto was Kishimoto's projections: The Movie. Not fun, in my opinion But yeah, out of the two, Gaiden was the better one

The only ones that ended up "playing safe" establishing characterizations on the younger characters was Toei with GT and that was a true disaster.

GT Goten : Copy/Paste of manga epilogue Goten with magnified manwhore attitude. Shitty fighter.
GT Pan : fusion of Bulma's straighfowardness, Videl's tomboy attitude and Chi-Chi's looks mixed with brattyness and all gone wrong. Shitty fighter, mostly due to her losing her way during almost the whole series until grandpa Goku rekinled that flame, and still, when that happened, the series ended.
GT Marron : Normal Girl with nothing to add. Dresses like a grandma. Doesn't even fight.
