Then just pick whatever model sounds interesting: forest fires, avalanche dynamics, BTW sandpile etc. It's actually a very simple conceptually, but leads to very complex behavior that we see everyday.
You can also go into fractals and shit, plenty of interesting stuff that makes cool pictures.

I fucking hate this, why do people think the only interesting physics is the meta-physical bullshit or string theory? There is plenty of interesting physics that is still researched today that has nothing to do with CERN, "god particles" and cosmic inflation, but what gets all the attention?
Wikipedia the "Brazil nut effect", there are still MULTIPLE explanations why when you shake a bunch of mixed nuts the largest and heaviest convect to the top. Papers are published on this even in 2009!
