Still on the ys raw (2012 impression) im finding it hard to have consistent results, some sessions it seems to remain a bit bitter for ~7 steeps before mellowing out and becoming more floral and creamy other times it is like that almost from the get go with the bitter notes being more evenly distributed throughout, I think it has to do with the ratio of whole leaf and broken leaf, will try to be more careful breaking the cake next time and see if that is the cause

Feng Huang Dan Cong. I've been enjoying it so far; whereas some other Oolong varieties taste too similar to tigaunyin for me, this has its own distinct flavor which is very pleasant for rainy days like today.
The guy at the story also mispronounced the pinyin, but I didn't know the tones to say it correctly either so I said nothing.

Lived my whole life eating my mother's cooking and going to average at best restaurants because my circle of friends don't like spending money on food. Combine that with never having left my country, never having travelled anywhere since i was 12 and my parents never taking me anywhere to eat when i was growing up and this is where i ended up. Turkey thread

Okay, /ck/...let's talk turkeys. I've cooked one by myself one other time and it turned out very good. I'm just curious about y'all's tips, experiences, methods, and techniques.

What I'm going to do is BASICALLY

1. Let it soak in a brine overnight
2. Pat it dry, then slather sage or some other kind of herbed-butter under the skin
3. Salt and pepper the outside
4. Chop some onions and celery and other aromatics and hers beneathe the turkey rack in the roasting pan. Probably add a little broth to the bottom...

Here's what I've done the last few times I got a [frozen] turkey for Thanksgiving:

Put the turkey in the fridge a week before.
When it's thawed just enough that I can cut into it with a little effort but it's still relatively frozen, separate wings, legs and back from the breast.
Separate drumettes and wingtips from flats.
Separate drums from thighs.
Refreeze drumettes, flats, drums and thighs for future use.
Continue thawing breast, back and wingtips along with the neck and giblets.
Three days to TG, debone the breast, trying to...

Not sure which board to post this in. Is anyone else celebrating Diwali tomorrow (((alone)))?

Just made these diyas out of wheat flour and water. Planning to make besan laddu and rice payasam tomorrow, and then pudi rice/masoor dal rice/yogurt rice for dinner. I'd also like to make almond milk (cow milk with almonds in it, that is). I was thinking about Mysore pak, but probably only next year.

I recommend trying the stalwarts first: Maker's Mark and Wild Turkey 101. They're just about the only bourbons I'll buy consistently.

They won't break the bank and it'll give you a good impression of the fundamental style. That being said, my favorite is Van Winkle Special Reserve 12yo Lot "B". Sadly, it's virtually impossible to find where I live, you mileage may vary if you live in the US.

It represents the peak of flavor between boldness and complexity better than most. It represents what lesser bourbons strive for, and what some overpriced brands feel or think a ridiculous price and marketable prestige can replace.

ok children, I have a hotplate, a grill, a mini-fridge, and a misguided desire to teach you faggots how to cook. I have access to great local produce, scores of small farms raising livestock, and probably the best dairy products in the US. Mine is, in no particular order:
- sloppy burger from any chain fast food ;McCrap is fav, I have to admit
- kebab from local turkish peddlers
- nachos with chili con carne and jalapenos and sour cream and guacamole and salsa

Reason why I ask is I wan't to put something new on night meny at place I work but my ideas are not very creative because my drunk taste is pretty basic.

Try to get some pizza from Regina's and some cannoli from Mike's Pastry or Modern.
Parish Cafe has some of the best sandwiches in the city.
Saus has amazing belgian style fries, poutine, and kebab.
Mr. Bartley's has really good hamburgers.
And then of course you have the bottom tier fast food like Raising Cane's, Tasty Burger, or the Yard House.

I do know. Best soul food place around me was in unnamed ala carte restaurant in a rural highway gas station near a black blue collar town. I'd ask for 3 oxtails, green beans, mac and cheese, and a biscuit for $8. Everything perfectly seasoned. Only $6 if I wanted chicken instead which was usually some sort of marinated "bay chicken".
