What are some good cooking methods for very lean cuts of red meat?

I'm an avid hunter and end up with quite a bit of very lean venison and wild pig meat every year. I usually slice it very thin and use it in a stir fry or pound it out and use it for chicken fried steak but I'd like to try some different cooking methods. Cubing this meat and using it in stew or beans results in dry, somewhat tough, and bland chunks of meat. Most of it is a bit too tough to be enjoyed as steaks (and I don't want to eat med-rare wild pig meat either).

Buy meat grinder. Mix 30% pork fat and make any sausage, meatball, meat patty you want.

It's okay, nothing special - still better than smirnoff or supermarket own brands.

Personally I'd take russian standard or absolut over it, both are usually near the same price and they are both better vodkas in my opinion.

Russian standard really disappointed me. Bought it for the first time a few weeks ago, and it honestly tasted more like a gin than a vodka.

A friend let me try one of these from his parent's fridge when I was about 8 or 9 and I ended up asking for another one every 10 minutes until the jar was gone. I've been going through a couple jars a month since then. I even had them shipped to me in Afghanistan.

Preheat oven, 350ish. Quarter enough apples to line the bottom of a cast iron frying pan. Make enough pie dough for one crust. Melt 1/4cup of butter in the frying pan. Sprinkle enough sugar to cover the bottom of the pan about 1/8" deep. Arrange your apple quarters in the pan and cook over medium/high heat until the sugar starts to caramelise. You may need to move the pan around to keep the heat even. Turn each piece of apple over when it is nice and brown, cook the other side. Put dough over top, throw the pan in the oven. Cook until the crust looks good

I currently work at a Wine Bar & Grill as a bus boy (I'm 19) and I make around $60 off tips and $40 at $6.18 per hour equating to $100 a night. The place is pretty cozy not too busy so it's manageable but I still put 100% effort in overseeing the little things get taken care of. To be honest I really feel like my effort doesn't match my pay so I'm thinking about applying to some Brazilian steakhouses doing the same deal, I think the effort I put in would fit perfectly with that type of restaurant and the pay will reflect that too.
