For example, I'm making pumpernickel with the following:
50g rye sourdough starter
1000g cracked rye
200g rye berries
120g maple syrup

probably not by much... maybe everything is a little more concentrated since you lose some moisture to the baking process

Strangest I've ever had? Went to a little jerky/smoked meat thing, one of the guys there had skunk. Wasn't awful, nothing to write home about.

How do I prevent food from cutting the roof of my mouth? My wife's son is autistic, and he only eats Crunch Berries, tortilla chips, cheetos puffs, and french bread pizza. These are the only food items we're allowed to have in the house, because he has tantrums otherwise.
The solution I've come up with so far has been to only eat every other day, or steal leftovers from the fridge at work. My wife has my credit cards and everything(was an alcoholic) so I don't make any unwise spending decisions, so I have to steal leftovers from work or sometimes...

What are some good fundamentals for becoming a great baker? My goal is to be able to bake sandwich loaves with great variety without having to read a recipe.

Depends on what kind of bread you're making. Many recipes will have baker's percentages to make it easy to scale them up or down. There are other things you need to learn like how to mix the dough, how to let it rise and not overwork the dough.
Find a good supplier for flour and eggs, buy an high quality oven that maintains heat, and practice recipes a lot with minor variations each time.
Having friends as taste testers is a plus as well. No one turns down sweets till you fuck it up.
