So today I made Ragu a la Bolognese (with handmade fresh Tagliatelle) and I used the "official recipe" of Bologna, as per this video:

Started by rendering the speck (I cubed it first), then added the onions/carrots/celery till they were translucent. Added the beef and browned it (took about 20mins), then added the wine and after about 10 mins the tomato paste diluted in beef broth. I let it simmer on very low heat for an hour and a half, added the whole milk, cooked for another 20 minutes then took it. What do you think?

By the way, I was thinking that maybe slow-cooking it would help? Things tend to turn out great when I slow-cook them.

Depends on what type of coffee you like, how many people you're making it for, how much time you have.

I like the Aeropress if I'm making an americano-style coffee for myself, but it can only do one cup. The Moka pot is better for multiple people as you can set it and serve nice concentrated coffee for 2 or 3 people, also if you like your coffee strong this is better than the press or the aeropress.
Personally I find the french press a pain in the ass, it never works for me. Always comes out too...

Recently got hired as executive chef of a restaurant and bar that does several million dollars per year in sales. Place has been open for around a decade and we are always busy.

The menu when I came on board was a shitshow, a straight up dumpster fire... 15 apps... 50 entrees, just all over the board, no real cohesion to it. The problem I'm finding is that the kitchen and storage is just too small for all these unnecessary extra items. Alright louie /ck/ youve helped me out in the past, so i return again for shitty cooking episode 2!

pics of my shitty cooking included as per usual

My question today: why do I seem to keep making half cooked fish?? I have made this salmon filet 2 nights in a row now, same problem both times.

I cooked this piece of fish on cast iron grill skillet, same one I use for all pieces of meat grilled indoors. I cooked it skinless side down for 5 minutes, 3 minutes skin side down, on high heat, per instructions. Obviously the heat was too high as the outside is SCORCHED....

The problem? The inside is fucking PINK bordering on RAW. The taste, fresh off the grill, I would describe as "barely warm" except for the thin parts and the outer layer. Tasted okay because I dont mind eating shit burned and it the seasoning was fire, but whats concering me at this point is the possible fucking PARASITES I have living in me now from eating this fucking thing.

The method for getting the heat to transfer to the middle of the food is to cook for a longer time to allow the thermodynamics time to do their magic.

i got you OP. i lost over 100 pounds in two years going vegan. try and avoid the vegan food but here are some starter recipes
black bean tacos (best on crispy shell or tortilla)
whole wheat pasta with spinach, classico is the best imo it tastes amazing and is 1 gram of fat and no added sugar
grape nuts + almond/soy milk
big fat bowl of edamame
chick pea chicken tikka, just buy a little chicken tikka masala jar or make it if you want to be adventurous
ramen minus egg and meat, just tons of vegetables
also pbnj, i ate one almost everyday. whole wheat bread, low sugar jam + chia seeds and pb2
lentil collared greens and potato soup
another sandwich is bread + hummus + sliced cucumber, toast the bread for best flavor
make and experiment with some seitan
french fries, no oil just potatoes and seasonings, i eat this with heads of lettuce mainly

most dishes i dont wanna describe consist of some rice plus beans and potatoes on top of a leafy (curry rice and potatoes with chick peas on top of steamed spinach and kale)

remember to keep your fats low and work out

Walking in and asking to train is a pretty far shot, most people start out serving and work up, I know 2 people who've taken courses on it, it'll help you learn cocktails but won't teach shit about speed, multitasking, or customer service really.

You can always learn some common drinks and get some empty bottles and spouts to fill with water and practice mock drinks at home. It'll give you some practice if you decide to bullshit about job experience.

Has anyone done ground beef by chopping the meat by hand and made a burger successfully? I tried that recently but the burgers kept falling apart as I was cooking them. Any tips that don't include adding binding agents? Should I be chopping finer? Packing tighter? Higher heat? More fat? Less fat?

I've done it a couple times when I've had a lot of time on my hands. You're probably making them too thin. Generally, you want to do with for thicker patties for steak like product. Make sure you use 80% chuck. Chop more finely if you need to.
