Due to health, I have had to cut back on my fat intake.
What are some fun salad ideas?
The more homemade the better.
Honestly? Whatever you're in the mood for, so long as you know that majority of the salad is to get your servings or vegetables.
So kale, non-iceberg lettuce, and baby spinach are a good start. Iceberg lettuce has really no nutritional value. you could add some fruit, like strawberry, apple, dried cranberries but gauging on your situation, I'm going to hazard a guess that you're also curbing your sugar intake, so be mindful on how much sweet fruit you're adding.
A small crumbling of feta or fresh mozzarella won't hurt, plus added protein.
Sprinkle in some chopped nuts or sunflower seeds, then finish off with a dressing you like. I like taking a few tart raspberries blending to a pulp, and combining it with EV olive oil for a simple homemade vinegarette.

You've got a lot of fat and slow twitch muscle in there. If you've cooked duck before, handle it like that. If you need a brief primer: treat the breasts like you would a steak. They're fine to cook bloody and they'll like a pan sauce, something tangy made with citrus or wine, or you can cure them and end up with something remarkably like country ham. Probably too late for most of the Americans on /ck/. But there's always next year!
First, to make a pumpkin cake, once required a baking pumpkin and a pinch of salt.
2. Remove the stem of the pumpkin and cut in half.
3. Scrape out the seeds and strings.
Sprinkle a pinch of salt on both sides then put face down on a baking tray lined with parchment paper.
Cook in a 400F oven for 40-45 minutes until very soft.

You might like this /ck/. There's a series on at the moment that has Ainsley "the oil gargoyle" Harriott taking his mate around who has never eaten anything more adventurous than meat and two veg. He's never even had pasta.
I don't know how Len Goodman got to his age without even one trying a curry, but it's mainly worth it for Ainsley's antics.
I sort of think he's putting it on. I mean, he enjoys basically everything he tries, even chilli oil, which you'd expect would be offputting to someone who's never had any spice.
Those dumplings are fucking mental though, I can barely fold a tortellini.
