For reference, my background in this industry is a high volume craft cocktail bar where we cut out own ice for some cocktails (we also used crushed, Kold Draft, and Collins Spears from Cocktail Kingdom molds). Current gig is a hotel bar with less resources as it doubles as a restaurant, but the selection of spirits is on par with the other joint sans amaros. I also prefer drinking at dive bars off duty since I'm a bar hopper.
Where can I buy or how can I make the sauce Outback serves with the bloomin onion ck?
I've checked all my local stores but can't find anything branded as such.
1/3 cup mayo
2 Tablespoons sour cream
2 Tablespoons creamy horseradish sauce
1 Tablespoon ketchup
1/4 teaspoon paprika
1/2 teaspoon garlic salt.
1/4 teaspoon cayenne
Try something like that.
To make sauce: In a medium bowl, combine mayonnaise, ketchup, horseradish, 1/3 teaspoon paprika, 1/4 teaspoon salt, 1/8 teaspoon oregano, a dash ground black pepper and cayenne pepper; mix well. Keep sauce covered in refrigerator until needed

It's shit a ton of grease and shitty meat. Undercook the taters if it's hash and grate them thick. Eggs should be somehow rubbery all over but still have a pocket of runny egg white.

Is it a good idea to save and use the fat left over from making stock?
Made chicken+veggie stock the other day and there is a sizable amount of separated fat. Should i just toss it?
It could be good for frying certain things, like I like to stir fry using duck fat so I can't imagine chicken fat would be much different. You could also mix it with butter and use it to coat a roasting bird.
No, use it. It's called schmaltz. If making soup it's a good idea to sweat your veg in it before adding the veg to the pot. And reserve some fat for when your soup is done. You can add a bit more unctuousness to your soup by adding a tablespoon at a time toward your tastes. An article was just published about this in the NYT.

In the city, there's an open market that has pretty good food. This one middle-aged guy that runs a torta stand has pretty good stuff, and he's friendly as fuck. One of my best street food experiences ever. If you want more proper good, Yucatan has some really great local foods (sopa de lima being one of them). Cochinita pibil is amazing, as are the stuffed tortilla things you can find all over the place. Yucatecan rellenos of different varieties are good, too, as are most of the sauce-covered foods you'll encounter...

I've never heard of a wrestler trying to gain weight. The ones I knew in high school were always starving themselves, consuming almost nothing but water and even taking up smoking in an effort to get into an easier weight class.
What happened? If you gain weight to make varsity in a higher weight class, you're going to be at a disadvantage since the people in that class cut weight to get there.
IMO shakes are the best for getting your macros if you're skeleton mode and need easily-consumed calories.

What's the best poor people lunch and why is it the lowly quesadilla?
I only put meat in mine if I have meat leftover. Usually I just buy a block of Mexican white squishy cheese, slice off a piece and then sprinkle cheddar or mozzarella or whatever I have in the fridge over it, spice it and fry it in peanut oil. Cant cost more than 1$ or $1.50 for ingredients for a filling lunch.

Make a New Moon with gin, lime juice, and triple sec, and tonic. You can sub vodka for gin or 86 the tonic and serve it up.
Seriously, gin sours are amazing and this works well in them.
