Gonna try cooking quiche, any french friends that can help by sharing their recipes and/or tips?
I'm not too sure what's best or what variants exist.
Just make a pie crust, make sure to pre-bake it. Then you can basically add whatever you want. Milk, cheese, season it well. Also cook all of your fillings, like mushrooms, before so you don't end up with watery quiche.
I recently learned Americans don't eat lamb. As someone who sells a few hundred heads of lamb a year I am disappoint.

Lamb is delicious but very expensive in markets in the US. You need to look for a "Halal" market, excellent lamb at very good prices.
Best burgers ever: half chuck roast, half lamb, grind them together, gently form patties, grill them. Out-fucking-standing.
