Accidently put cumin instead of cinnamon into a fruit and yogurt parfait. Unedible.

Once put way to much paprika into a bbq pork recipe. It actually came out really good. So that was a good time.

Please, PLEASE tell me what the fuck I'm doing wrong? Every time I deep fry chicken, it's still undercooked on the inside and I have to finish it in the oven.

Even if I follow the recipes exactly, make sure my meat is at room temperature, and use a fucking thermometer to check the oil, this happens.

It's a matter of style. In Sicily many dishes get a teaspoon of sugar dissolved ion a little red wine vinegar. I've had Sicilian American red sauce that was noticeably on the sweet side My opinion is you don't need sugar if you start with good quality tomatoes. But if tomato paste is involved there's nothing wrong with adding a little.

This is a very interesting topic.

I find that the best deals on turkeys are often just before thanksgiving.

The price of a bird a couple weeks back was probably close to 2 or 3 bucks a pound. But right around thanksgiving, when demand is highest and you would think price would go up - price drops like a rock.

The other times of the year when no one eats turkey and there is no demand price increases.

This is one of the weirdest bipolar displays in capitalism as far as i can tell.

i've been trying to make potato chips

the first time i made them i htought i cut them too thick even though they cooked quite nicely

the second time i cut them thinner (the thinnest setting on the mandoline) and they didn't cook evenly at all

This might be hard to believe, but use a microwave instead of an oven.
Slice them nice n thin, put em all in a bag, add some oil & shake well.
Space the slices out on a piece of parchment paper (cut it so it'll fit on the rotating thingy), season with whatever you want, and nuke for about 5~8 minutes.
Exact timing will of course depend on the power, just keep an eye on em, and see around what time they are completely crispy.

First off, it is possible to cut inconsistent thicknesses on the manodline if you are holding the potato wrong, or if you press too hard (or not hard enough). Check your chips as you cut them to make sure they're of equal thickness before you start.

As for even cooking: don't overload the fryer, and either stir them while they're frying or shake the basket from time to time.

People who waste food are the fucking worst. I have some friends who always help themselves to gigantic portions of my cooking, only to eat half the plate and throw the rest in the bin. I refuse to give any more food to these friends, even if I've cooked up a storm that day and they ask nicely. I have a couple of friends that I visit some times and every time I do there is some pan or a plate full of food, left uncovered overnight and looking disgusting and of course you have to throw it out, but they treat this as a normal thing. Why not just put it in tupperware or cover the pan with a lid and refrigerate the leftovers instead of leaving them out to turn?

Hi friend, that definitely looks a little too dark. Try lowering the heat and waiting it out next time.

Now just store it in a cool cabinet for a day or two, and the ghee should somewhat solidify, should look like normal ghee but there might be dark liquid at the bottom. I'm sure it's still usable.

Hey there. A few weeks ago i made a thread about surströmming. I ended up trying it and it wasn't that bad. I mean it kind of tasted like salt, onions and body odor and for the smell just add rotten eggs and vinegar. I can see myself liking it more if I eat enough of it.
I ended up freezing it but I would like to ask if I can just thaw it and eat it or if that would be unsafe.

I live in Amsterdam, and you have to avoid a lot of the tourist deathtraps. Cafe Luxembourg is great, as are De Engelbewaarder, Toscanini, Daalder, La Perla and Loetje is decent.

Don't fall for 'local cuisine' memes, the Dutch have zero culinary history and you will suffer. Most bars have 'bitterballen' which are great though, small croquettes filled with ragu. Avoid the Leidseplein, Rembrandtplein...
