Persian warfare was mostly skirmishing based. Thats why the Greeks and later Alexander was so effective against them, they never really had to deal with heavy infantry that much.
Look at the Immortal there, that was basically the heaviest armor in their army. The heavy infantry in Achaemenid armies were typically mercenaries.
With the Parthians came the influence of steppe warfare and integration of the really powerful heavy cav in the Persian armies. Its why the Sassanids fared so well against the Huns, by that time they had basically perfected how to deal with the constantly marauding steppe tribes, horse archers and cataphracts.

Not as long as you'd think. For an experienced armorer, they would have been able to do it relatively quickly.
Think about this way, for someone who has never cooked before slicing 3 onions would take a while, but an experienced chef could probably do it in under a minute
Were a lot of these helmets used in combat? The really narrow eye slots make it seem like you couldn't see anything. And some of these full armor sets seem cumbersome, were they designed to be used in combat as well?
