Not only was I pissed that luke didnt even speak for his big reveal, but I was pissed that him and rey just kept staring at eachother for an uncomfortable amount of time before we get a completely out of place helicopter shot into credits.

The style is called fencing. I can't think of any other movies that focus on it as much as the ones you've mentioned, though. Just older clips and scenes.
Die Another Day had a scene with a few seconds of fencing, but except for looking at Agent Ice Queen in a fur bed, I wouldn't recommend that to anyone.
