I just beat that guy and I gotta say. It only took me 2 tries. Once I knew what he did I could make a party that had my odds a bit better.
You need more than buffs and debuffs, but its not that hard.

To be fair, the very first fight on hard mode in the tutorial can easily kill if Demiqua gets crit. It's actually harder than Matador because you can easily get through him with smart fusion and buffs.

Because if you really, really want to grind you might as well do it later when you have multiple demons to get skills for as fusion fodder anyway. It's a god damn waste of time doing it in the tutorial zone.
Not really since it's a waste of time grinding in the hospital since nothing gives you experience so you end up staying way longer than what you need and you don't need to grind to beat the first boss
The starting fights against the pretas are basically luck based, yeah. It's one of the few bullshit parts in the game. You wanna put your first few points into endurance so you have enough health to survive getting ganked.

In any RPG where you get more than 1 party member, you want to get them as soon as possible. So you have a better shot at killing things, and
not dieing to the first enemies in the game
More like getting 3 experience per battle in the starting zone is a waste of time, it's like grinding against level 2 pidgeys
You get experience but it took you a million years to get experience when you could've just moved on and gotten more experience in a shorter amount of time by progressing the game
de/buffs barely even help with that fight though. The thing that kills you is damn near EVERYTHING you would've picked up is weak to force, so he teaches you about press turns.
You playing on hard, OP? I did, it sucked shit to try to get to a save after grinding/recruiting a cool demon only to get gang banged by a surprise attack. Not to mention escape is almost impossible without an item on hard.
It also reminds me that I died against the dragon (very first fight) in ff mystic quest when you only had the option to attack.

The game gives you a demon for free who has Zio that the boss is weak to and you can recruit a Shikigami as well since he has Zio as well to make the boss a cakewalk, you don't need to grind to beat the first damn boss
30 hours into SMT IV and I feel like I haven't even scratched the surface of the game yet. Just let the demon at the government building go free because he was a cool dude

I tried beating Matador on hard at level 16 with all the buffs and debuffs available to me. Only Nozuchi had a zan null at that level. Shit still wasn't debuff since he'd clean any debuffs on him and wipe out everything with his physical skill.
Finally said fuck it and grinded for 2 levels for the zan repelling demons on top using all of my macca to but the force nullifying magatama. Then I steam rolled him.
I thought I would stabilize after that, but even the random encounters come off as tedious.

Honestly it sounds like you need to get good. I beat him at level 14-15 then had trouble with thor, where I then grinded to level 18 for that guy with no arms that had elec absorb/resist I forget which. Then proceeded to have no problems with the game.
Granted that was since my Makami learned wind cutter so I didn't get stuck in the park

Even with her at -3 and +3, she hit 88/96 of that gun move that hit all. If she decided to use it twice in her turn, that was a wipe. At least minotaur had to smirk when he decided to win.
I was like level 12 or something at medusa or something if I recall. Which was apparently underleveled.

You do know that MegaTen1&2, SMT I, II and If... and Strange Journey came out first in nintendo consoles right? The only main MegaTen game that came out first in a PS console was Nocturne, so nintoddlers as you say were the one's that let the franchise even get enough games to reach Nocturne.

to be fair the entire opening area in Nocturne is completely RNG on hard mode; missing an attack or getting critted basically guarantees a game over
