PC being children about it, realizing that it being an exclusive is a good thing. Exclusives sell consoles and keep companies alive, which lets them pay those developers who make these exclusives more money for better quality games.
If games weren't exclusive, there would be no point in consoles, which means no one to give developers loadsa money to make these games.
Exclusives are MADE to sell consoles, that's half the point. If you didn't have to buy a ps4 to play Bloodborne, you would never have considered getting PS+ or extra accessories for said console. They want you to buy the console to spend more money with their company.

Exclusive = people need to own X console to play our game. We must make a game that caters to the tastes of the demographic that owns this console, or make a game of high enough quality to purchase the console. People are more likely to purchase the console ~for~ our game, among others, especially late in the console lifetime, so lasting appeal is incredibly important. Lasting appeal also allows us to keep the price higher for longer, offsetting the smaller playerbase.
Multiplatform = our game is on most (or all) platforms. Our potential consumer base is relatively massive, so pandering to a niche is extremely likely to hurt profit margins. We need to make a product that appeals to as many console owners as possible (lowest common denominator) to maximize profit, so we need to make it attractive and approachable. Due to the size of the potential consumer base we need to advertise as much as possible, which will cut into profits considerably, cutting into the actual game budget will alleviate some cost, but it will still further necessitate the need for a larger consumer base (lowest common denominator). Due to a combination of selling via advertising and selling on most (or all) consoles,most people who want the game buy it early in release, shrinking late term product sales and reducing long term product value. The need for lasting appeal is mostly lost, as sales (and therefor profits) are tied to percieved quality (hype) and not actual quality, so we instead create "exciting" games that sell on pre-release advertising as opposed to gameplay, and avoid demo gameplay in cases where hype cannot be falsely built upon it.
Exclusives HAVE to be good because they are made to sell consoles
If they aren't exclusive there is no reason to make it good, or even finished, just pump it out the door and sell it on hype.
It's why dark souls was disjointed and flawed at times due to rushed and cut content, whereas demon's souls was polished in spite of it. If it wasn't for the broken archstone and boletaria having an extra level, we wouldn't even know they cut content.

Exclusives don't have to be good, they can bomb like Ryse did. People voted with their wallets, and eventually they ported it to PC.

Just because a game doesn't run at 1080p/60fps doesn't make it a bad game. The Last of Us, when it came out on the ps3, had neither of those BUT still won plenty of awards and was well received. Eventually they made a remastered version, but it wan't necessary to enjoy the game.

Also of note that the souls games are an oddity in that a what was assumed a "niche" turned out to actually be a popular concept, so the selling points and hype advertising are largely the same as they would be as an exclusive because for whatever reason it's what worked and there's no need to change it.
That being said, comparing DeS and BB to DaS and DaS2 as products it's disturbingly easy to see the polish exclusivity lends to an end product.

But seriously, the attitude of the developers is so different when making games on one platform. I have a high end pc, I play pc games and mostly the pc version is the best version of a game. But literally all my favorite games ever are console games, most of them came out exclusive. Metal Gear Solid, Resident Evil, the good Final Fantasy games, Silent Hill, Alan Wake and whatnot. They WOULD objectively be worse if they were trying to make them on many platforms at once. During development, the team should never be split in like three teams for xbox, PS and pc.
