When i played the beta of SFV i felt that AAing in there was actually useful, while in SF4 when you AA people don't give a fuck and keep jump in on you until they get their stupid high damage from jump ins

yes. links are just rhythm/timing based inputs thst you work into muscle memory unless you have to hitconfirm one hit (counterhit combos).
even then, if you have the timing down for a regular link from one normal, counterhit links don't change at all in timing the followup button since recovery frames of the move don't change; only the window of time you have to link widens by 3 frames (in sf4 and sfv) due to counterhit.
it may very barely affect your frame-perfect punishes in street fighter, but it's very easy to adjust to the lag. so easy that you almost never notice it being a problem. it's mainly monitor lag that can be a problem.

if your opponent always quick rises then there's still oki you fucking retard
just because you don't have time to take a bite out of a sandwhich and then toss an ambigious projectile/dive kick before the other person gets to stand up doesn't mean the game doesn't have oki, instead you go for low/throw or something
getting hit by a crossup like that isn't nearly the same as doing CC activation to pause the game & give you i-frames whenever you feel like it, then reacting to see if you get to 80-100% someone or just do lots of chip damage instead
Ironically i played through SFV Beta with Nash and antiairing felt awesome so i don't what to say at this point, i guess you are right that it depends on character but still i think SFV did AA better at least a little

Not really a big deal. One of Rolento's strengths is that he gets big damage off of his CCs, and the most damaging CCs in that video are against people in the corner or in the air. Deejay in ST can do this kind of damage without meter off of a crossup.

Do you guys believe that Ed Boon's design choice on having 3 different style variations for the MKX characters was poorly implemented and lacked variety? I've been watching some streams of MKX lately and it feels like each character, even though having 3 variations to choose from, most people will always default for the strongest, regardless of the match-up.

I'm new to fighting games, but I play smash and the last of the brawl community sort of died out when sm4sh came out. Is that something that can happen when SFV comes out?

A better analogy would be if you can order different kinds of foods which are the different characters. For every kind of food there are different versions. You can order a green pepper fillet or a fillet with mushrooms for example. These are the variations.
You are saying being able to order different kinds of fillet is wrong because the cook (NRS in this case) is inept and can oly cook green pepper fillet right and his mushroom fillet tastes like shit. If the cook were able enough, even if one of them may be his specialty, the other would still be tasty and if you hate pepper but love mushrooms you would still go for the mushroom fillet over the green pepper one.
Also I'm sure even in MKX there are a few characters where more than 1 variation is good.

I can't get past their normals at all. I've tried looking at high level play but none of it makes sense. Only thing that does is that if they are walking that's when I can attack properly.

It is, actually. You're probably only familiar with the console version. The boss characters weren't in the initial release of SF4. They were post-launch characters. Non-playable versions of them appeared in arcade mode.
Gouken was shown in the tutorial, but I doubt that he'll be a playable character.
I can see plenty of SF characters showing up in the storyline, but that doesn't mean they'll all have character models you can fight.
